Chicken Mango Tacos
These chicken mango tacos are the perfect easy summer meal, inspired by relaxed beachside cooking. Using Olga’s Fine Foods chicken patties keeps things simple and full of flavour. Paired with a fresh mango salsa, a little mayo and a squeeze of zesty lime. The ingredients are easy to prep ahead or pack for a picnic - a fun, fresh and low-effort taco that tastes like summer.
Makes 6-8 Tacos
INGREDIENTS
1 packed of Olga’s Fine Foods Chicken Patties
1 packet of soft tacos
Mayonnaise
1 avocado
SALSA
1 mango, diced
1 peach, diced
1 lime
Bunch of coriander, chopped
1 small red capsicum, diced
1/2 red onion, diced
Salt
METHOD
Prepare the salsa
Add the diced mango, peach, red capsicum and red onion to a bowl. Add the chopped coriander and squeeze over the juice of one lime and season with salt. Gently toss to combine, then set aside to let the flavours develop.Cook the chicken patties
Heat a pan or barbecue over medium heat and cook the Olga’s Fine Foods chicken patties according to the packet instructions, until golden on the outside and heated through.Warm the tacos
Lightly warm the soft tacos in a dry pan, on the barbecue, or in the oven for a few minutes until soft.Slice the patties
Once cooked, remove the patties from the heat and slice them into strips or bite-sized pieces.Assemble the tacos
Add some avocado and sliced chicken to each taco, top with generous spoonfuls of the mango salsa, and finish with a little mayonnaise.Serve + enjoy
Serve immediately while warm. These tacos are best enjoyed fresh, with extra lime and coriander if desired.
