Insalata di Limone

Insalata di Limone is the perfect fresh and zesty dish for any day of the week. Bursting with bright citrus flavour and simple ingredients, it comes together in minutes and brings a touch of Europe to your table.

INGREDIENTS

  • 4-5 organic lemons

  • 1 bunch fresh mint leaves, torn

  • 1 tbs white vinegar

  • 1/4 cup extra virgin olive oil

  • Red pepper flakes | sea salt


METHOD 

  1. Slice the lemons in half lengthwise, then cut them into thin half-moon pieces. Remove any seeds. Stack the slices and cut them into thirds.

  2. In a bowl, combine the lemons with half of the mint, red pepper flakes, vinegar, and olive oil. Season with salt and pepper, then mix well.

  3. Let the mixture marinate for at least 2 hours.

  4. Serve and garnish with the remaining mint.
