Italian-Inspired Chicken Burgers
This Italian-inspired chicken burger brings together fresh, vibrant flavours using Olga’s Fine Food’s Chicken Patties as the hero ingredient. It’s a simple yet elevated twist on a classic burger, capturing that perfect balance of comfort and Italian-style indulgence in every bite.
INGREDIENTS
1 packet of Olga’s Fine Foods Chicken Patties (available at your local Coles)
6 crispy rolls (I’ve used tartaruga rolls)
12 slices of prosciutto
1 ball of mozzarella
100g rocket
1 medium zucchini
2 large tomatoes
For the herb mayonnaise:
100g of mayonnaise
1 bunch of parsley (or any fresh herb you like)
1 lemon (you’ll need the juice and zest)
METHOD
Cook the chicken patties:
Start by browning the chicken patties in a pan, gently flattening them as they cook. Once they’re golden brown, transfer them to a baking tray and place a slice of mozzarella on top of each patty. Bake in the oven for 10–15 minutes, or until cooked through.
Prep the toppings:
While the patties are in the oven, slice the tomatoes, wash the rocket, and cut the zucchini into thin ribbons. Lightly grill the zucchini in a pan until slightly charred. Season to taste. While the pan is hot, add the prosciutto and cook until crispy.Make the herb mayonnaise:
In a bowl, mix your mayonnaise with finely chopped parsley (or your herb of choice). Add a generous squeeze of lemon juice and about a tablespoon of lemon zest. Mix well and season to taste.Assemble the burgers:
Spread a generous amount of herb mayonnaise on both sides of each bun. Layer with rocket, tomato, grilled zucchini, a chicken patty with melted mozzarella and finish with crispy prosciutto.
